Unlike orchestras and bands, who generally play the dots as the composer intended, organists tend to treat the music as an opportunity to display their own imagination.  Whether in church or cinema, they have a long tradition of improvisatioin.  Unfortunately, having little need to fit in with other musicians, some develop sloppy rhythm.
